If you mean the smtp or pop3 server, that would be the name of the server handling your outgoing and incoming email respectively. That should be information provided by your ISP.

Those are provided to you by your ISP. Free accounts like Hotmail and Yahoo do not use POP3 or SMTP. Gmail, I believe, does.
