Summary: Depending on if you're trying opening more than one email or more than one attachment, you may or may not be able to do it.

How do I open up more than one item at a time in Microsoft Outlook? I can only open 1 photo at a time. |
It all depends on what you mean by "item".
•
If you mean email message, you can just select more than one (hold down CTRL while clicking the individual messages), and then press enter or select File, Open.
If, as I suspect, you mean several attachments in a single message, the answer is actually: you can't.
What I do instead is open the message, and select File, Save Attachments..., and then save all the attachments to a directory on my hard disk. Then, in the case of pictures, I use a picture viewing application (Firehand Ember) to view the photos.
