Depending on if you're trying opening more than one email or more than one attachment, you may or may not be able to do it.

How do I open up more than one item at a time in Microsoft Outlook? I can only open 1 photo at a time.

It all depends on what you mean by "item".

If you mean email message, you can just select more than one (hold down CTRL while clicking the individual messages), and then press enter or select File, Open.

If, as I suspect, you mean several attachments in a single message, the answer is actually: you can't.

What I do instead is open the message, and select File, Save Attachments..., and then save all the attachments to a directory on my hard disk. Then, in the case of pictures, I use a picture viewing application (Firehand Ember) to view the photos.
